Making Beurre Blanc

Beurre blanc is an emulsion of cold butter into a reduced base of acid and shallots. You build it by whisking firm cubes of chilled butter into a simmering reduction of wine, vinegar, and aromatics until the sauce thickens into a pale, opaque, and velvety state.

Ingredients
- 1/4 cup dry white wine
- 2 tbsp white wine vinegar
- 1 shallot, finely minced
- 1/2 lb unsalted butter, chilled and cubed
- 1 pinch kosher salt
Step by step
Reduce the base
Combine the wine, vinegar, and minced shallots in your saucepan over medium heat. Simmer until the liquid is almost entirely gone, leaving only about a tablespoon of syrupy solids.
Lower the heat
Turn the burner to its lowest setting. Add one cube of butter at a time, whisking constantly. Wait for the butter to be almost completely absorbed before adding the next piece.
Build the structure
Continue adding butter until the sauce is thick and opaque. The consistency should resemble a heavy hollandaise. Do not let the sauce boil once the butter is added.
Finish and strain
Season with salt. If you prefer a smooth sauce without bits, pass the mixture through a fine-mesh sieve into a warmed bowl.
Questions people ask
What if my sauce breaks?
Remove the pan from the heat immediately. Add a tablespoon of heavy cream or cold water to a clean bowl and slowly whisk the broken sauce into it to re-emulsify.
Can I make this ahead of time?
It is best served immediately. If you must wait, hold it in a thermos or a warm water bath for no longer than thirty minutes.
Tips
- If the sauce feels too thick, whisk in a few drops of warm water.
- A heavy-bottomed pan helps prevent hot spots that can break the emulsion.
- Keep the finished sauce in a warm place, such as the back of the stove, but never return it to direct heat.
Variations
- Beurre Rouge: Replace the white wine and vinegar with red wine and red wine vinegar for a robust, purple-hued sauce meant for heavier proteins.
- Herbed Beurre Blanc: Fold in a teaspoon of finely chopped fresh tarragon or chives at the final step.
