Middle Eastern
A. region where the date palms of the Iraqi marshes have rooted since Sumer, where a Damascene rose garden still feeds the world’s rosewater, where a Bekaa Valley vineyard prunes obeideh in February, where a Bedouin date oasis hand-pollinates Medjool at the equinox, where Yemeni terraced coffee climbs above qat at three thousand metres, where a Persian chahar bagh keeps four quadrants twelve degrees cooler than the alley outside, where a Galilean za’atar slope is foraged one stem in three, where an Egyptian molokhia plot is sown by the fellah at the first cool week of October. We pulled together every growing method worth knowing — eight methods, deep — from the bustans, terraces and oases that keep the Middle Eastern calendar.
