Stovetop Popcorn

Delicious and fluffy popcorn kernels in a close-up shot ready to enjoy.

Stovetop popcorn relies on the balance between high heat and movement to ensure every kernel pops without burning. You need a heavy-bottomed pot, a neutral oil with a high smoke point, and a lid that allows steam to escape just enough to keep the kernels crisp.

Ingredients

  • 3 tbsp neutral oil (grapeseed, canola, or refined coconut)
  • 1/2 cup popcorn kernels
  • 1/2 tsp fine sea salt
  • 2 tbsp unsalted butter, melted (optional)

Step by step

  1. Heat the oil

Place the oil and the three test kernels in the pot over medium-high heat. Cover and wait for them to pop.

  2. Add the remaining kernels

Once the test kernels pop, remove the pot from the heat. Pour in the rest of the kernels, cover, and let them sit for 30 seconds off the heat. This brings them all to the same temperature.

  3. Pop the batch

Return the pot to medium-high heat. Keep the lid slightly ajar to vent steam. Shake the pot back and forth constantly until the popping slows to two seconds between pops.

  4. Finish

Immediately remove from heat and dump into a large bowl. Toss with salt and butter while hot.

Questions people ask

Why did my popcorn burn?

The heat was likely too high or you weren't shaking the pot enough. The kernels need to be in constant motion to avoid sitting on the hot metal floor of the pot.

Can I use butter instead of oil?

No, the milk solids in butter will burn instantly at the temperature required to pop corn. Use oil to pop, and butter only for seasoning at the end.

Tips

  • If your pot lid fits too tightly, leave it cracked an inch to prevent the popcorn from steaming and becoming chewy.
  • Use a high-smoke point oil; olive oil will burn before the kernels pop.
  • Do not crowd the pot. If the kernels have to stack more than two deep on the bottom, use a larger vessel.

Variations

  • Herb-Infused: Stir dried oregano or thyme into the melted butter before drizzling over the popcorn.
  • Chili-Lime: Toss the finished popcorn with a pinch of chili powder and fresh lime zest.
