Dal Tadka

Delicious Indian dal tadka garnished with herbs in a traditional bowl on a vibrant tablecloth.

Dal Tadka is a simple preparation of cooked lentils tempered with a fragrant mix of spices bloomed in hot fat. You boil split pulses until they soften into a thick porridge, then pour a sizzling infusion of ghee, cumin, garlic, and dried chilies over the top just before serving.

Ingredients

  • 1 cup split yellow pigeon peas (toor dal)
  • 3 cups water
  • 1/2 tsp turmeric powder
  • 2 tbsp ghee
  • 1 tsp cumin seeds
  • 3 cloves garlic, minced
  • 2 dried red chilies
  • 1/2 tsp red chili powder
  • to taste salt

Step by step

  1. Cook the lentils

Rinse the dal thoroughly until the water runs clear. Combine with water, turmeric, and salt in a pot. Simmer until the lentils collapse and turn into a soft, thick consistency, about 30 minutes.

  2. Whisk the base

Use a whisk to vigorously stir the cooked lentils. You want a creamy, uniform texture with very few whole grains remaining.

  3. Prepare the temper

In a small pan, melt the ghee over medium heat. Add the cumin seeds; wait for them to crackle and darken slightly. Add the garlic and dried chilies, sautéing until the garlic is golden brown.

  4. Combine

Remove the small pan from the heat and immediately stir in the chili powder. Pour the bubbling ghee mixture directly over the pot of lentils. Cover for one minute to let the steam trap the aroma, then stir once before serving.

Questions people ask

Why did my garlic turn black?

The fat was too hot. If your garlic darkens too quickly, discard it and start the tadka over; burnt garlic ruins the entire pot.

Can I use oil instead of ghee?

You can, but ghee provides a necessary richness that neutral oils lack.

Tips

  • Always add the chili powder off the heat; it burns in seconds and becomes bitter if left over a flame.
  • If the dal becomes too thick as it sits, splash in a little boiling water to loosen it.
  • Toor dal is traditional, but red lentils work if you are short on time; they soften in half the time.

Variations

  • Mixed Dal: Substitute half of the pigeon peas with split red lentils (masoor dal) for a faster cook time and a silkier mouthfeel.
  • Onion and Tomato: Sauté one small diced onion and one diced tomato in the ghee before adding the cumin to build a deeper, more textured base.
