Anda Bhurji

Anda bhurji is a dry scramble of eggs cooked with aromatics, green chilies, and ground spices. Unlike a French scramble that relies on butter and gentle heat, this dish thrives on high heat and a quick hand to ensure the eggs stay textured rather than creamy or wet.

Ingredients
- 4 large eggs
- 1 medium red onion, finely diced
- 1 large tomato, diced
- 2 green chilies, serrano or bird's eye, minced
- 1 tsp fresh ginger, grated
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1 tbsp oil or ghee
- Handful fresh cilantro, chopped
- To taste salt
Step by step
Heat the fat
Heat the oil or ghee in your pan over medium-high heat until it shimmers.
Sauté the aromatics
Add the onions and sauté until they lose their raw bite and turn translucent. Add the ginger and green chilies, cooking for another 30 seconds until fragrant.
Add the base
Add the tomatoes, turmeric, and chili powder. Cook until the tomatoes soften and the oil begins to separate slightly from the edges of the masala.
Scramble
Crack the eggs directly into the pan or whisk them lightly in a bowl first. Pour them over the masala. Use your spatula to move the eggs from the outside in.
Finish
Remove from heat when the eggs are mostly set but still look moist. They will continue to cook for a moment after you pull the pan off the burner.
Garnish
Fold in the fresh cilantro and serve immediately.
Questions people ask
Should I whisk the eggs before adding them?
It is optional. Whisking produces a more uniform scramble, while cracking them directly into the pan gives you larger, distinct white and yellow curds.
Can I make this ahead of time?
Anda bhurji is best served the moment it leaves the pan. Reheating often makes the eggs rubbery.
Tips
- Keep the heat high; if the pan is too cool, the onions will steam instead of sautéing.
- If the pan looks too dry before adding the eggs, add a splash of water to loosen the masala.
- Serve with toasted crusty bread or warm flatbread to scoop up the masala.
Variations
- Loaded: Add finely diced green peas or chopped bell peppers along with the onions for extra crunch.
- Creamy: Finish with a small knob of butter stirred in right at the end to add richness.
